Tofu Chocolate Mousse
2 packages silken tofu (see 1 below) (1
firm and 1 extra firm)
3/4 cup maple syrup (see 2 below)
1 cup melted chocolate chips (see 3 below)
1 1/2 tsp. Vanilla
1 Graham cracker crust
Melt chocolate in double broiler. Blend everything thoroughly in food
processor or blender. Pour into graham cracker pie crust. cool 30 min.
1. Silken tofu may not be in the cooler but out on the shelf, ask!
2. Maple syrup, get unprocessed.
3. Chocolate chips that we like are "Tropical Source" dairy
free dark chocolate chips. It is in a green package with an orange border.
We sometimes line the crust with slices of banana and put walnuts on top.
