If you don't like the traditional yams commonly served
at Thanksgiving you will love these Yams.
2 small yams, peeled and cut into "carrot stick" pieces
1 tablespoon olive oil
1 tablespoon Parmesan cheese, grated
1 small onion, chopped
Toss all the ingredients together and put into a 1-quart casserole. Cover
and bake at 350° for 1 hour. Serve hot. To brown better remove the
casserole lid the last 15 minutes. Fresh parmesan is better but doesn't
compact as well when you grate it yourself, so you may need slightly more.
